Eliane Cipolatti is a Food Engineer and has a PhD from the Federal University of Santa Catarina, Brazil. Part of her thesis was developed at the Consejo Superior de Investigaciones Científicas in Madrid (Spain). She is currently a Professor at the Federal Rural University of Rio de Janeiro. She has experience in the area of food science and technology, enzyme technology, mainly lipases, and bioprocesses, acting in the production of enzymes by solid and submerged culture, immobilization of enzymes, production of bioactive esters and study of antioxidant activity of carotenoids and phenolics compounds.
Evelin Manoel is a Chemist and Biologist and holds a PhD in the area of Bioprocesses from the Federal University of Rio de Janeiro (UFRJ, Brazil). She works as a Professor, in the Department of Biochemistry, at the Institute of Chemistry, UFRJ and in the Professional Master's Course at the Faculty of Pharmacy, UFRJ. She also acts as a Professor in the Graduate Program in Pharmaceutical Sciences, at the Faculty of Pharmacy, UFRJ. She has experience in the areas of biochemical and biochemical engineering with an emphasis on biotechnology applied to pharmaceuticals and cosmetics, acting on the following topics: production of bioactive substances, biocatalysis, enzymatic kinetics, reaction optimization in batch reactors and reactors in continuous flow, resolution of enantiomers, ionic liquids and production of lipases for industrial application.
Débora de Oliveira holds a Master's in Chemical Engineering from the Federal University of Santa Catarina (UFSC, Brazil) and a Ph.D. in Chemical Engineering from the Federal University of Rio de Janeiro (1999). She currently works as a permanent professor in the Postgraduate Program in Chemical Engineering and the Postgraduate Program in Food Engineering, both at UFSC. She works as a reviewer for several scientific journals in the area too, including Food Chemistry, Biochemical Engineering Journal, Chemical Engineering Science, Applied Biochemistry and Biotechnology, Food Science and Technology (Online), Brazilian Journal of Chemical Engineering, Journal of Chemical and Engineering Data , Journal of Food Engineering, Enzyme and Microbial Technology, and FUEL. She has experience in the field of biotechnology, mainly enzymology, working over the last 20 years in the following topics. She has more than 330 articles published in scientific journals, and has supervised around 100 master's dissertations and doctoral theses, in addition to having supervised several postdoctoral internships.
